S’mores Ice Cream Sandwiches
It’s hard not to love a good s’more in the summer right?! Well we just took it up a notch over here. No churn vanilla ice cream with melted chocolate swirled in, toasted marshmallows sandwiched between homemade graham crackers. This is going to be a summer favorite!
No-churn ice cream
- 2 cups heavy cream
- 1 can (14 oz) condensed milk
- 2 tsp vanilla
- 1 cup melted chocolate
- 2 cups marshmallows
Graham Crackers
- 1/2 cup unsalted butter, room temperature
- 1/2 cup honey
- 1 tsp. vanilla extract
- 2 tbsp. water
- 1 3/4 cup whole wheat flour
- 1/2 cup cake flour
- 1 tsp baking soda
- 1 tsp salt
Directions
Starting with the ice cream, in a large bowl add the heavy cream and mix with an electric mixer until soft peaks form, fold in the condensed milk and vanilla until combined. In a separate bowl melt the chocolate chips at 30 second intervals and then drizzle into the ice cream and fold in to make ribbons. Line a 9×13 in pan with parchment and pour the mixture into the pan. Even it out and cover directly with plastic wrap. Place in the freezer for at least 3-4 hours.
For the graham crackers- in a large stand mixer with a paddle attachment, add the butter, brown sugar and honey. Mix together until smooth, then mix in the vanilla and water. Scraping down the sides as needed.
Pour in the dry ingredients, whole wheat flour, cake flour, baking soda, salt and cinnamon. Mix it all together until a dough forms. Divide the dough into two disks and wrap in plastic wrap to chill for at least 30 minutes.
Preheat the oven to 350 degrees. Start by rolling out one disk at a time. On a floured piece of parchment roll out dough to about 10×13 inch rectangle. Transfer to the baking pan, and using a pizza cutter cut dough into rectangles and dock with a fork. Place in the oven to bake for about 15 minutes until caramel brown and dry. Once they are baked and cooled. Carefully break the crackers apart.
Then to assemble the sandwiches, on a rimmed baking pan lay the marshmallows out flat and place in the oven to broil for about 1 minutes. Watch closely!
Lay the crackers out 3 across and 4 down, or to fit the ice cream 9×13. Place the ice cream over the crackers. Then place the toasted marshmallows over the ice cream and cover with the remaining crackers. Place in the freezer just for about 30 minutes to set. Then using a sharp knife cut the sandwiches and serve. Yes it will be messy but oh so worth it!
