Whole Roasted Cauliflower with Whipped Feta and Hot Honey

Whether you’re looking for an appetizer, vegetable side or show stopping vegetarian entree, this whole roasted cauliflower should be the go to. I’m going to be making this weekly. The cauliflower is gently rubbed with lots of spices, roasted off until it’s tender on the inside and golden and crisp outside. Placed on top creamy whipped feta and a little hot honey for the sweet and spicy to balance.

Whole Roasted Cauliflower

  • 1 head cauliflower, green leaves trimmed off the bottom
  • 2 tsp. ground cumin
  • 2 1/2 tsp. paprika
  • 1 1/2 tsp. chili powder
  • 2 tsp. turmeric
  • 1/4 cup olive oil
  • salt and black pepper

Whipped Feta

  • 1 block feta
  • 2 garlic cloves, peeled
  • 1/4 cup milk or heavy cream

Spicy Honey

  • 3 tbsp honey
  • 1-2 tsp cayenne (depends how spicy you want it)

Directions

Preheat the oven to 425 degrees.

Bring a large pot of water to boil. Place the trimmed cauliflower into the water. Let it cook for about 15 minutes until tender. When a fork is inserted it’s soft. Remove from the water and place onto a rimmed baking pan.

In a small bowl combine together the spices and olive oil, whisk until smooth. Pour over the cauliflower and rub it all over until fully coated. Bake in the oven for about 25-30 minutes until golden and slightly crisp.

While the cauliflower is cooking, for the whipped feta in a food processor with a metal blade add in the feta, garlic, and milk. Whip until completely smooth. Scrape down the sides.

For the hot honey, in a small bowl add the honey, heat just for a couple seconds in the microwave. Whisk in the cayenne.

To plate, spoon the whipped feta on to the bottom of the plate, place the cauliflower on top, then drizzle over the hot honey. Slice into it and enjoy!
