Winter Pavlova
Pavlovas are just a beautiful whimsical dessert. The meringues are soft and marshmallow like in the center and crisp on the outside. Topped with fresh whipped cream, segmented oranges, tangy pomegranates and crushed pistachios. A real show stopper for the holidays!
Pavlovas
- 4 egg whites (about 4 oz)
- 1 cup granulated sugar
- 1 tsp. vanilla extract
- 1 tsp. white vinegar
- 2 tsp. corn starch
- Whipped cream
- 1 navel orange, segmented
- 1/4 cup pistachios, crushed
- 1/4 cup pomegranate seeds
- mint leaves
Directions
Preheat the oven to 250 degrees. Line a rimmed baking pan with parchment paper and set aside.
In a stand mixer with a whip attachment, start by beating the egg whites until slightly foamy. Then gradually add in the granulated sugar, vanilla extract, white vinegar and corn starch. Continue to increase speed and beat for about 5-7 minutes until stiff glossy peaks. Make sure the scrape down the sides with a rubber spatula so everything gets incorporated.
So to bake them off you can either do one large one, or you can pipe little individual disks. Pipe or spoon 3-4 inch circles onto the prepared baking pan about 6 or so.
Place in the oven to bake for 1 1/2 hours, making sure not to open during this process. Then turn the oven off and let them sit in the oven to cool and continue to crisp up for another hour.
To serve, place one onto plate and top with a spoonful of whipped cream, orange segments, crushed pistachios, pomegranate seeds and fresh mint sprigs. Enjoy!
