Chocolate Mousse
This classic French chocolate mousse is so rich and creamy it practically melts in your mouth. Just a couple simple ingredients and you will have this on the table in no time. There’s no cooking, the hardest part will be letting it chill in the fridge. The egg whites and whipped cream give the mousse air and structure. It’s perfect for entertaining as everyone gets their own dish and it’s so beautiful, with a little whipped cream and chocolate shavings on top. I also added a little edible gold glitter just to really make it shine.

Ingredients
- 3 eggs separated
- 1/3 cup granulated sugar
- 2 1/4 cups heavy cream- divided
- 7 oz semi sweet chocolate, chopped
- whipped cream, chocolate shavings for garnish
Directions
In a large bowl whisk together the egg yolks and granulated sugar until smooth and pale yellow for about 1 minutes.
In a medium bowl, add the chopped chocolate and set it aside. Then in a small sauce pan heat up 1 1/4 cups of the heavy cream just until steaming, about 4 minutes. Remove from the heat and then carefully pour over the chopped chocolate. Whisk until all the chocolate is melted and smooth. If it doesn’t fully melt you can place the bowl over double boiler and let it continue to melt until smooth. Remove the chocolate from the heat and then let it cool until barely warm to the touch. When cooled pour the chocolate into the egg yolk mixture, and whisk until smooth.
In a large bowl, beat the egg whites until stiff peaks form. With a rubber spatula, fold 1/3 of the egg whites into the chocolate at a time keeping that air. Mix it together just until a few streaks remain.
Then in another large bowl whip the remaining 1 cup of the heavy cream to stiff peaks form. Again fold the whipped cream into the chocolate mixture. Spoon the mousse into 4-5 individual glass cups. Cover directly with plastic wrap and place in the fridge to let them set up for about 3-4 hours. Garnish with a dollop of whipped cream and chocolate shavings. Enjoy!
