Chicken Shawarma Wraps

Bringing the middle eastern street food to the kitchen! These are so fun and you can switch out the toppings if you want but the feta tzatziki and all the toasted spices really bring the chicken to life. Fresh naan and pita are also key to make these so good!

Ingredients

Feta Tzatziki

  • 1 cup greek yogurt
  • 2 garlic cloves, peeled
  • 1/2 lemon juiced
  • 1 tsp. cumin
  • 1/2 cup cucumber finely grated
  • 1/2 cup feta

Chicken Shawarma

  • 1 lb. boneless skinless chicken thighs, medium dice
  • 4-5 garlic cloves, peeled minced
  • 1 tbsp. shallot, peeled and minced
  • 2 tsp. paprika
  • 2 tsp. ground cumin
  • 1 tsp. ground cinnamon
  • 1 tsp. cayenne
  • 2 tbsp. lemon juice
  • 2 1/2 tbsp olive oil
  • 1/2 cup chicken stock
  • salt and black pepper
  • 2 fresh naan or pita bread
  • Toppings- lettuce, diced tomatoes, sliced cucumbers, crumbled feta

Directions

Feta Tzatziki

In a food processor with a metal blade attachment add in the yogurt, garlic cloves, grated cucumber, cumin, lemon juice, and feta. Puree it all together until smooth and set aside.

Chicken Shawarma

In a small dry sauce pan combine the paprika, cumin, cinnamon and cayenne and place over medium heat until they start smoking and toasting. About 2-3 minutes. This just enhances the flavors of those beautiful spices.

In a large bowl combine the chicken, garlic, shallot, toasted spices, lemon juice, olive oil, salt and black pepper. Mix it all together until it’s evenly combined and all the chicken is covered. Cover in plastic and place in the fridge for at least 1 hour.

Heat up a large skillet over medium heat and start browning the chicken. Cook until brown on all sides, and pour in the chicken stock to let it finish cooking. About 10 minutes.

Start to assemble the wraps, place a naan or pita down on work surface and add the lettuce, top with the chicken and then all the cucumbers, tomatoes, crumbled feta and feta tzaziki. Wrap in parchment to handle easier, and enjoy!
