Watermelon Feta Salad with Hot Honey

It’s like the classic watermelon feta salad but I added some cucumbers and a little hot honey to it. The sweet spicy kick to the watermelon is the perfect combination, with the crisp cucumbers, salty feta, and sweet juicy watermelon. Really quick and great for any backyard gathering!

Ingredients

  • 2 cups seedless watermelon, sliced into 1 inch squares
  • 1/2 English cucumber thinly sliced
  • 1/2 cup green or purple snap peas, thinly sliced
  • 1/4 cup block feta, small dice
  • fine herbs for garnish, mint, fennel fronds, edible flowers
  • 2 tbsp. hot honey
  • 1 tbsp. olive oil

Directions

In a large serving bowl arrange the watermelon and then top with the sliced cucumber, sprinkle on the snap peas and feta. Then drizzle on the hot honey and olive oil and finish with the fine herbs as garnish. Enjoy right away or keep in the fridge for up to 1 hour.
