Apple Chai Spice Scones
It’s almost fall!! So let all the apple spiced things begin! These scones are light and fluffy, and so good! There’s nothing worse than a dense scone. They are studded with fresh apples and a little chai spice. Perfect for a chilly morning and a cup of coffee!
Ingredients
- 1/4 cup granulated sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. kosher salt
- 3 cups all-purpose flour
- 1/2 tsp. ginger powder
- 1/4 tsp. ground cloves
- 1/4 tsp. coriander
- 1/2 tsp. ground black peppercorn
- 1/8 tsp. ground cardamom
- 1/4 tsp. ground fennel
- 1 tsp. cinnamon
- 1/2 tsp. fresh grated nutmeg
- 1/2 cup or 1 stick chilled unsalted butter, cut into pieces
- 1 large egg
- 1 1/4 cup heavy cream, plus more for brushing
- 1 medium sized apple (pick your favorite) I love McIntosh
Directions
Preheat the oven to 375 degrees F.
In a large bowl combine all the dry ingredients, sugar, baking powder, baking soda, flour, salt and all the spices. Whisk together until it’s all incorporated.
Using your hands or a pastry cutter work the butter into the flour mixture until it resembles small pea size pieces. Make a little well in the center and add the egg and heavy cream. Mix with a fork or wooden spoon so it forms a shaggy dough. Add in the apples. Knead dough until it just comes together. Try not to over work it.
Dump out onto a floured work surface and pat into a 1-inch thick rounds. Cut into 8 wedges and brush with remaining heavy cream. Sprinkle a little cinnamon sugar onto. Place onto a greased or parchment lined baking sheet pan. Bake for about 25-30 minutes or until golden brown. Let cool and enjoy! Store in an air tight container for 4-5 days. Or you can freeze the dough in wedges and bake them off as needed.
*you can make a little extra chai spice and keep it in a jar and use it whenever needed!
