Tomato Avocado Feta Dip

This dip has been in our family for years, its an old classic favorite. With all the bright flavors of summer. Bright juicy ripe tomatoes, salty chunks of feta and creamy avocado, with the fresh basil. It’s the perfect go to dip for any backyard bbq or picnic. This doesn’t hold great the next day though the tomatoes will start to break down. So eat it the same day you make it. But it’s really great if you want to make a lot of it for a party!

Ingredients

  • 2 cups roma tomatoes, medium dice
  • 1 avocado, medium dice
  • 1/2 cup red onion, small dice
  • 2 garlic cloves, minced
  • 1 block feta, cut into medium cubes
  • 1 tbsp. fresh basil, minced
  • 1-2 tbsp. olive oil
  • pinch of red pepper flakes
  • salt and black pepper
  • tortilla chips for dipping

Directions

In a large bowl combine the tomatoes, avocado, onion, garlic, basil and olive oil, red pepper flakes, salt and pepper and give it a big stir. Then add the feta in at the end. Mix it all together until combined, pour into a serving bowl and serve with tortilla chips. So easy! ENJOY!
