Whole Roasted Cauliflower with Whipped Feta, Chimichurri and Spicy Honey
I’m so excited about this recipe! It’s my new favorite vegetarian go to. The whole cauliflower gets smokey and crispy on the outside and tender on the inside, the poaching liquid infuses into the cauliflower and roasting it makes it crispy. While there is a tangy creaminess from the whipped feta, fresh herbiness from the chimichurri and a spicy floral sweetness from the honey. I add a couple sunflower seeds at the end for just a little crunch. But it’s so balanced and doesn’t make you miss the meat at all!!
Whole Roasted Cauliflower
Ingredients
- 1 large cauliflower head, trim the bottom green leaves off
- 2 1/2 cups dry white wine
- 1 lemon juiced
- 3 garlic cloves, smashed
- 2 bay leaves
- 2 tbsp. curry powder
- 2 tsp. black peppercorns
- 2 cinnamon sticks
- 2 1/2 tbsp butter
- pinch of red pepper flakes
- 1 tbsp. salt
- Sunflower seeds for garnish
Directions
Preheat oven to 475 degrees F.
Add everything except cauliflower into a large pot and bring to a boil. Once boiling reduce to a simmer and add the cauliflower. Cook for about 15 minutes just until you can insert a knife or fork and it’s tender. Remove from the liquid and place onto a rimmed baking sheet. Roast in the oven rotating it half way through for about 30-40 minutes just until it’s golden brown and beautiful all over.
Whipped Feta
Ingredients
- 8 oz feta
- 2 oz cream cheese
- 3/4 cup heavy cream
- 1 tbsp. lemon juice
Directions
In a large food processor with a metal blade attachment, add everything in and whip until it’s all smooth and combined, making sure to scrape down the sides.
Chimichurri
Ingredients
- 2 garlic cloves
- 1 tbsp. fresh mint
- 1 bunch of cilantro
- 2 tbsp. italian flat leaf parsley
- 1 lime juiced
- 2 tbsp. shallot, chopped
- 1 tbsp red wine vinegar
- 1/2 grape seed oil
- salt and pepper
Directions
Add everything except the oil into a blender and with the motor running drizzle in the oil. Making sure to scrape down the sides and blend until all combined. Season with salt and pepper. Set aside
Spicy Honey
Ingredients
- 3 tbsp. honey
- 1/2 fresno chili thinly sliced
Directions
In a small sauce pan heat the chilis into the honey over medium heat just until the honey is warm.
To assemble: add a large spoon full of the whipped feta down onto the plate. Slice the cauliflower into 1 inch slices, place on top of the cheese drizzle the chimichurri over the top and then the spicy honey. Garnish with sunflower seeds if you wish and serve immediately!!!
