Whitefish Salad
I had a salad similar to this when I was up in Grand Marais, MN, it was one of my favorite salads of all time! Up in Grand Marais they are known for their whitefish and happen to have some of the best right out of Lake Superior. I had to recreate this whitefish salad at home. I found some awesome Chilean sea bass from a local fish market and thought this would be perfect.
Ingredients
- 1 lb. whitefish, boneless and skinless
- olive oil
- salt and black pepper
- 2 cups Organic mixed greens
- 5-6 each cherry tomatoes
- 1/4 cup raspberries
- 1/4 cup blueberries
- 1/2 cup English cucumbers, sliced
- 3 red radishes, sliced
- 1/4 red onion, sliced
- 2 carrots, peeled and sliced in half
- edible flowers (try them! they add such a beautiful touch)
Directions
Heat oil on grill pan to medium high heat. Season fish with salt and pepper on each side. Cook on grill pan for about 5-7 minutes depending on thickness until each side gets nice grill marks.
Assemble the salad and top with the whitefish. Drizzle the vinaigrette over the top! Enjoy!!
Maple Balsamic Vinaigrette
Ingredients
- 1/4 cup Grade A Maple syrup
- 1/4 cup balsamic vinegar
- 1 1/2 tbsp. Dijon mustard
- 1/2 cup extra virgin olive oil
- salt and black pepper to taste
Directions
In a small bowl combine the maple syrup, balsamic and Dijon together. Slowly whisk in the olive oil until it emulsifies and season with salt and pepper.
