Whipped Honey Feta with Lemon and Roasted Olives
I’m always looking for quick and easy appetizers. This one is no exception! The feta is whipped with lemon and honey and then warm garlic herb olives are spooned over the top. The warmth of the oil and olives heat up the cheese, and it’s just so good. Serve it with crusty bread or crackers and you will have yourself a perfect little dish for any upcoming gathering.
Roasted Olives
- 2 cups kalmata or green olives, pitted
- 4-5 garlic cloves, peeled and whole
- 4-5 fresh thyme sprigs
- 3-4 oregano sprigs
- 1 lemon, quartered
- pinch of red pepper flakes
- 1/3 cup of olive oil
Whipped Honey Feta
- 1 block feta (8 oz)
- 3 tbsp. honey
- 1/2 lemon juiced
- 3 oz cream cheese
- 2 tbsp heavy cream
- salt and black pepper
- Serve with crusty bread or crackers
Directions
Preheat the oven to 425 degrees.
In a baking dish combine together the olives, garlic, herbs, lemon, red pepper flakes and olive oil. Toss together until everything is coated. Bake in the oven for about 20 minutes until the olives are warmed through, garlic is golden and the oil is sizzling. Remove from the oven and whip the feta.
In a food processor with a metal blade attachment combine together the feta, honey, lemon juice, cream cheese and heavy cream. Whip it all together for a minute or two until it’s smooth. Making sure to scrape down the sides. Season with salt and pepper. Spoon into serving bowl and pour the warm olives, olive oil, garlic and lemon all over the feta. Serve with the crusty bread or crackers. Enjoy!
