Vegan Salted Chocolate Chip Cookies
Yes vegan! If anyone knows me they know that I love my dairy, butter, cheese, cream all of it. But over the holidays I was making some cookies and have a couple family and friends that are living the vegan life and it inspired me to try out some vegan cookies! I am telling you, you will not be able to tell the difference!!! These are so soft chewy and chocolatey. I could eat the whole bowl of dough by itself, and not feel quite as bad about it. It has coconut oil, coconut milk and applesauce inside the dough but it is the BEST! I promise you won’t even miss the butter or eggs, and no one will know the difference!
Ingredients
- 1/2 cup coconut oil, solid (make sure it’s not melted at all)
- 1 1/4 cup dark brown sugar, packed
- 2 tsp. vanilla extract
- 1/4 cup coconut milk (use the thicker cream part of the milk, I like the Thai variety)
- 1/4 cup unsweetened applesauce
- 2 1/4 cups all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 1/2 cups chocolate chips (use vegan if available, I like the Enjoy Life brand)
- Flake sea salt on top
Directions
Preheat oven to 375 degrees F.
In a large bowl with an electric mixer or paddle attachment cream together the coconut oil and brown sugar. Mix in the coconut milk, vanilla extract and apple sauce. Mix until it’s all combined.
Then add in the flour, baking soda and salt. Mix all together until incorporated and it looks like cookie dough. Then stir in the chocolate chips.
Scoop out 3 tbsp cookies onto a greased baking pan, place about 3-4 inches apart. Bake for about 11-13 minutes until crisp on the outside and soft in the center. Sprinkle the sea salt over the top and let cool for a minute and enjoy!!
