Tomato Jam
When it’s the end of summer and you’ve made all the tomato sauce and salsa, make tomato jam! It’s seriously so easy and so good! Put it on toast, a charcuterie board, or a grilled cheese. The tomatoes are cooked down with brown sugar, cinnamon and a pinch of red pepper flakes until it’s thick and jammy.

Ingredients
- 3 lbs. tomatoes diced
- 2 cups brown sugar
- 2 cinnamon sticks
- 1 pinch red pepper flakes
- salt and black pepper
Directions
In a medium sauce pan add all of the ingredients over medium low heat, stirring occasionally. Let it simmer and cook down until all the liquid is released and cooks down to a jam like consistency. Cook about 15-20 minutes. Remove cinnamon sticks and let cool slightly. Pour into a blender and blend until smooth. Pour into jar and keep in the fridge for about 2-3 weeks.
