Tomato Avocado Toast with Sweet Peppers and Whipped Feta

It’s officially summer and that means allll the tomato toast! There really is nothing better than pan fried crispy bread, sweet juicy tomatoes and creamy avocado. But with this one I added whipped feta and sweet peppadew peppers with fresh herbs. It’s bright, creamy, salty, crunchy, perfect little snack!

Ingredients

  • 1 slice sourdough or artisan bread
  • 3 tbsp. olive oil
  • 2 tbsp. whipped feta (recipe follows)
  • 5-6 slices avocado
  • 3-4 slices tomatoes
  • 1 tbsp. peppadew peppers, chopped
  • drizzle of olive oil
  • salt and black pepper
  • herbs herbs and edible flowers

Directions

In a large skillet heat the olive oil over medium heat. Add in the sliced bread and pan fry for about 3-4 minutes on each side until crisp and golden.

Spread 2-3 tbsp whipped feta over the bread evenly. Then place the sliced tomatoes and avocados over the top. Sprinkle on the peppadew peppers, drizzle a little olive oil over the top and season with salt and black pepper. Garnish with herbs and flowers if you wish. Cut in half and enjoy!!

Whipped Feta

  • 1 block feta
  • 1/3 cup heavy cream
  • 1 tbsp lemon juice
  • 1 garlic clove, peeled

In a food processor with a metal blade attachment, whip together the feta, heavy cream, lemon juice and garlic until it’s really smooth. Add a little more or less of cream if needed until it’s really smooth.

*I just love to keep this in the fridge and use it for everything, spreading on sandwiches, in pasta, orzo, toast what ever needs a little extra creaminess!
