Tart Cherry Almond Granita
A granita is a semi-frozen dessert similar to a slushy. I found awesome little tart cherries at the farmers market the other day and couldn’t figure out what to make with them. Finally came up with this special little sweet treat. It takes a little time to make but it’s totally worth it!
Ingredients
- Â 1/2 pint tart cherries
- Â 1 tsp. almond extract
- ¼ cup granulated sugar
- ¼ cup water
Directions
In a small sauce pan place the water and sugar and bring to a medium heat. Heat until sugar dissolves. Remove from heat and let cool down.
In a blender take the washed cherries and pick all the stems off and take all the pits out. Blend cherries to a smooth like consistency. Add the almond extract and cooled syrup, blend together. Pour mixture into a shallow glass pan and place in freezer for about 3-4 hours. Every half hour take a fork and scrap it, the consistency should create those beautiful little ice crystals. When completely frozen scoop into serving dishes and serve with a sprig of mint.
