Sweet Potato and Yam Fries with Maple Aioli
These are a great alternative to the russet potato fries; so much more colorful and healthy!! I serve these with my Herbed Turkey Sliders and it’s a great combo!
Ingredients
- 1 Yam, peeled and julienned
- 1 sweet potato, peeled and julienned
- 2 tbsp. extra virgin olive oil
- 1 tbsp. fresh herbs (I use rosemary, thyme, basil, but you can use any assortment you wish)
- salt and pepper
Directions
Preheat oven to 450 degrees F.
Spread the potatoes onto a baking pan. Drizzle the olive oil and sprinkle with salt, pepper and herbs. Toss all together to make sure all sides of potatoes are evenly coated. Spread them to an even layer on baking sheet and bake for 20-30 minutes, flipping them every ten minutes. Bake until golden and crisp.
For Maple Aioli:
Ingredients:
- 1/4 cup Mayonnaise
- 3 tbsp. maple syrup
Directions:
In a small bowl, whisk the mayo and maple syrup together until combined. Dip those fries in there!!
