Sweet Green Muffins

My kids are obsessed with muffins! Anytime I am making them they are pretty much gone with in minutes. These green muffins are packed with fresh spinach, creamy banana, applesauce, sweetened by maple syrup. They are so fluffy and soft and perfect for any kids. Plus how fun for St. Patricks day?!

Ingredients

  • 3/4 cup milk (I used almond)
  • 1/2 cup butter, melted
  • 1/2 cup maple syrup
  • 4 cups, fresh spinach
  • 1 large banana, ripe
  • 2 tbsp. apple sauce
  • 1 egg
  • 1 tsp. vanilla extract
  • 2 cups flour
  • 1 1/2 tsp cinnamon
  • 2 tsp baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt

Directions

Preheat the oven to 350 degrees and spray your muffin tin or line with paper cups.

In a blender combine together the milk, cooled melted butter, maple syrup, spinach, banana, egg and vanilla all together. Blend for about a minute scraping down the sides until it’s all smooth.

Pour into a medium bowl and add the dry ingredients, flour, cinnamon, baking powder, baking soda and salt. Mix it all together until combined. Scoop into prepared muffin pan and bake for about 15 minutes or until they are slightly golden and when a toothpick is inserted it comes out clean.
