Swedish Meatballs

Now that it’s getting so cold outside all I crave is warm delicious comforting food. What is seriously better than warmly herb spiced meatballs and a rich buttery gravy along whipped mashed potatoes. They can also be a perfect appetizer for the holidays coming up or a great weeknight dinner!

Meatballs

Ingredients

  • 1 lb. ground beef
  • 1 cup yellow onion, peeled and small diced
  • 4 garlic cloves, peeled and minced
  • 1/8 tsp. ground cinnamon
  • 1/2 tsp. freshly ground nutmeg
  • 1/4 tsp. ground allspice
  • 1 egg
  • 3/4 cup panic bread crumbs
  • 1 tbsp. fresh parsley, minced
  • 1 tsp. fresh thyme
  • 2 tsp. kosher salt
  • 1 tsp. black pepper
  • 2 tbsp. olive oil

Creamy Gravy

Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup all-purpose flour
  • 4 cup beef stock
  • 1 tbsp. lemon juice
  • 1 tsp. freshly ground nutmeg
  • 1/2 tsp. ground allspice
  • 3/4 cup heavy cream
  • salt and black pepper to taste
  • chopped parsley to garnish

Directions

In a large bowl combine the ground beef, onion, garlic, spices, egg, bread crumbs, herbs, salt and pepper. Using your hands gently mix it all together until everything is well incorporated and combined. Make sure not to over mix.

Using either a small cookie scoop or your hands roll about 2 tbsp meatballs out, and place into a large sauce pan or skillet over medium high heat with olive oil. Gently brown the meatballs on all sides. You may have to cook them in batches. Once browned, remove from heat and set aside to make the gravy.

Pour out any excess grease if any from the meatballs. Melt the butter and once it starts to bubble, reduce the heat to medium low and then gently whisk in the flour. Cook the roux for a couple minutes to cook the raw flour. Then pour in the beef stock and keep whisking until the sauce thickens. Add in the lemon juice, spices, salt and pepper and let it cook for about 4-5 minutes until its thickened and then add in the heavy cream. Add the meatballs back in and let it all simmer together for another 8-10 minutes until meatballs are cooked through and the gravy is thickened.

Serve over warm mashed potatoes and garnish with fresh parsley!!
