Strawberry White Chocolate Macadamia Nut Cookies
Sweet buttery cookies with crunchy macadamia nuts and melt in your mouth white chocolate chips. But I added a spring twist with some freeze dried strawberries. They are soft and chewy in the center and crisp on the edges.
Ingredients
- 1 1/2 cups freeze dried strawberries
- 1/2 cup unsalted butter, room temperature
- 3/4 cup granulated sugar
- 1 egg
- 1 tsp. vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. corn starch
- 1/4 tsp. salt
- 1 cup macadamia nuts
- 1 cup white chocolate chips
Directions
Preheat the oven to 350 degrees.
In a large plastic bag add the freeze dried strawberries and use a wooden mallet to crush down to a fine powder. Or in a food processor with a metal blade attachment.
In a stand mixer with a paddle attachment add the butter and sugar and mix until light and fluffy. Then add in the strawberry powder, egg and vanilla and continue mixing for 2 minutes until combined. Using a rubber spatula to scrape down the sides.
The add in the dry ingredients, flour, baking powder, baking soda, corn starch and salt. Continue mixing until it’s all combined. The stir in the macadamia nuts and white chocolate chips. Grease a baking pan and scoop heaping 2 tbsp balls out and place about 2 inches apart on the pan. Bake for 10-13 minutes until lightly golden.
Let cool on the pan for about 10 minutes and transfer to cooling rack. Enjoy
