Strawberry Tres Leches Cake

Tres leches cake it a huge favorite in this house hold, I made it yesterday for Cinco de Mayo. It’s three milks soaked into a sponge cake. It’s beautifully rich and creamy, like having a glass of milk with your cake. But I soaked strawberries into the milk and then added strawberries inside, topped with fresh whipped cream and more strawberries, it’s heavenly.

Ingredients

  • 1/2 cup (1 stick) unsalted softened butter
  • 1 cup granulated sugar
  • 5 eggs
  • 1/2 tsp vanilla extract
  • 1 vanilla bean
  • 1 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp. salt
  • 2 cups strawberries, small diced, divided
  • 2 cups whole milk
  • 1 (12 oz) can evaporated milk
  • 1 (14 oz) can condensed milk

Directions

Preheat the oven to 350 degrees.

Spray a 9×13 inch baking pan.

In a large stand mixer with a paddle attachment, whip together the softened butter and sugar until light and fluffy. Slowly add in the eggs one at a time. Make a long slit down the vanilla bean and scrape out all the seeds inside and mix in along with the vanilla extract. Scrape down side and make sure it’s all incorporated.

In a separate bowl sift together the dry ingredients, the flour, baking powder and salt. Add into the batter and mix slowly so everything gets mixed together well. Then fold in 1 cup of the strawberries. Pour into prepared baking pan and bake for about 30 minutes until slightly golden and when a tooth pick inserted comes out clean.

While the cake is baking, place the other 1 cup of strawberries into a bowl and mash with a fork. Add in the whole milk, condensed milk and evaporated milk. Whisk everything together.

Once the cake is out of the oven and still warm, poke holes with a fork or chop stick into the cake. Then gently pour the milk mixture over the cake letting it all soak in. It may seem like a lot of milk but the cake will soak it up, it also works better a little warm. Chill in the fridge until completely cool. About 1 hour.

Whipped Cream

Ingredients

  • 1 1/2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 tsp. vanilla extract
  • 1 vanilla bean
  • fresh strawberries for garnish

Directions

In a large bowl mix the heavy cream on high until foamy, with the mixer going, gradually add in the sugar and vanilla extract, and vanilla bean. Then continue to mix until stiff peaks form. Spread evenly over the cake and top with more strawberries. Enjoy!!!
