Strawberry Oat Bars

If you’re looking for a quick afternoon snack or dessert with a scoop of ice cream these bars amazing! Layers of oat crumble on the bottom and then juicy sweet strawberries and topped with another layer of the oat crumble. Nothing not to love about these!

Ingredients

For the dough

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/3 cup brown sugar
  • 1 large egg, room temperature
  • 1 tsp. vanilla extract
  • 1 1/2 cup all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp salt
  • 1 cup old fashioned oats

Strawberry Layer

  • 3 cup (fresh or frozen) strawberries
  • 1/4 cup granulated sugar
  • 1 tbsp. lemon juice
  • 2 tbsp. cornstarch

Directions

Preheat the oven to 425 degrees. Line a 8×8 inch baking pan with parchment paper. Set aside.

In a stand mixer fitted with a paddle attachment cream together the butter and sugars, until light and fluffy. Scraping down the sides. Add in the egg, vanilla extract and mix to combine. Then pour in the flour, baking soda, and salt. Continue to mix, then add in the oats. Mix until everything is evenly combined.

Press half of the dough into the bottom of the prepared pan. Set aside.

In a medium mixing bowl combine together the strawberries, sugar, lemon juice and corn starch. Mix until everything is evenly coated pour on to crust. Then spread the remaining dough over the top of the strawberries.

Bake at 425 degrees for 5-7 minutes. Reduce the heat to 350 and continue to bake for 25-30 minutes. Until the top is crisp and golden or when a knife is inserted comes out clean. Let cool slightly then cut into bars and serve.
