Strawberry Honey Lavender Crepes
Traditional French crepes can be filled with sweet or savory fillings, and served hot or cold. They are perfect any time of day and so much easier to make than you think. I filled these with a quick strawberry jam and then drizzled with a lavender infused honey. The sweet floral really enhances the flavors of the strawberries. We just love them!
Crepes
- 2 1/4 cups whole milk
- 4 eggs
- 2 tbsp. sugar
- 1 tsp. vanilla extract
- 1/2 tsp. salt
- 1 1/2 cups all-purpose flour
- 4 tbsp. butter, melted and slightly cooled
Strawberry Jam Filling
- 2 cups fresh or frozen strawberries, trimmed and quartered
- 2 tbsp. granulated sugar
- 1 tbsp. lemon juice
Honey Lavender
- 1/2 cup honey
- 1 tbsp dried lavender buds
Directions
Starting with the crepes, in a blender add the milk, eggs, sugar, vanilla extract, salt and flour. Blend until smooth and then pour the melted butter into the mixture. Scrape down the sides with a rubber spatula. Continue to blend until smooth.
To cook them off, use an 8-10 inch nonstick pan, spray with non-stick spray. Place over medium heat. Pour 1/4 cup of the batter into the pan swirl around the batter to the edges of the pan. Use a rubber spatula to loosen the edges. Let it cook for about 30 seconds, once the batter is set in the center flip and let it cook for another 30-45 seconds. Once the crepe is set and lightly browned, remove from the pan and continue with the rest of the crepes. Spraying between each one.
For the strawberry jam filling, in a small sauce pan add the strawberries, sugar and lemon juice over medium heat. Let the juices release and cook for about 5-10 minutes stirring until the juices start to thicken. Then use a fork and smash the strawberries down. Remove from heat.
Then for the honey lavender, in a small sauce pan just heat together the lavender buds and honey over low heat for a couple minutes, just so the lavender infuses into the honey.
To assemble, place a crepe flat onto the plate, spoon a couple tbsp into a quarter of the crepe and fold it in half and then in half again. Drizzle the honey on top and garnish with more strawberries. Enjoy!
