Spinach and Feta Hash

It’s been awhile!! Happy new year! This is one of our favorite breakfasts I make for the girls. They always have their forks ready to go and can’t eat it fast enough. Crispy spiced potatoes with a big handful of wilted spinach, two eggs and crumbled feta over the top. Sometimes I add chicken sausage in it too for extra protein. It only takes about 15 minutes and fill us up all morning.

Ingredients

  • 3 tbsp. avocado oil
  • 1 russet potato, small diced
  • 2 tsp. garlic powder
  • 2 tsp. cumin
  • 2 1/2 tsp. paprika
  • 3 tsp. chili powder
  • 1 cup or large handful of baby spinach
  • 2 eggs
  • 1/4 cup feta crumbled
  • salt and pepper to taste

Directions

Heat up a large cast iron over medium heat with oil. Add the diced potatoes and spread out evenly. Season with spices and salt and pepper. Let cook until deep golden and crispy. About 10-15 minutes. Stirring occasionally.

Once potatoes are crispy, add in the spinach and wilt down just for a minute or two, then add in the eggs. Stir them in to scramble. Cook for another minute or two just to combine everything. Crumble in the feta and spoon onto serving plate. Add chimichurri or any hot sauce and serve immediately. Enjoy!
