Spicy Margarita Sorbet
Happy Cinco de Mayo!! In honor, I’m doing a clean refreshing little palate cleanser. This sorbet is spicy and sweet and just perfect at the end of a rich Mexican dinner, or just on a hot summer day on the patio; go for it!
Ingredients
- 1/4 cup granulated sugar
- 1/4 cup water
- 1 jalapeno, cut into large pieces
- 1 tbsp. tequila
- 2 tbsp. blood orange liqueur
- 1/4 cup fresh lime juice
- 1 cup fresh orange juice
- lime wedge and mint for garnish
Directions
In a small sauce pan combine the sugar, water and jalapeno. Set on medium high heat and cook until sugar completely dissolves. Cool slightly, and set aside.
In a small bowl combine the tequila, blood orange liqueur, lime juice, orange juice and cooled simple syrup. Pour mixture into 8×8 glass pan. Place into the freezer and lightly scrap the surface of the sorbet with a fork every 1-2 hours. You will start to see ice crystals form. When the whole thing is mostly frozen it is ready. It should look like snow cone ice. Serve immediately garnish with a lime and mint!
