Spicy Detox Chicken Wonton Soup
I haven’t been feeling good lately, this cold that has been going around got the best of me. So all I wanted this weekend was to go back to myself and feeling good again. This soup was so comforting and everything I needed to feel better. The bone broth itself is extremely healthy for you and it has so many detoxifying and immune boosting ingredients, perfect to kick that cold!
Chicken Broth
Ingredients
- 8 cups unsalted chicken stock
- 4 green onions, trimmed and sliced
- 2 inches, fresh ginger, peeled and sliced
- 1 tbsp. lemongrass, minced
- 2 tbsp. soy sauce
- 1 lime, juiced
- 1 cup spinach
- 1/2 cup hen of the woods mushrooms, trimmed
- About 15-20 Enoki Mushrooms, trimmed
- 1 fresno pepper, optional, sliced
- Lime wedge, cilantro, fresno peppers for garnish
Directions
In a large sauce pan combine the chicken stock, green onions, ginger, lemon grass, soy sauce, lime juice. bring to a boil then reduce the heat and let simmer for about 30 minutes. Meanwhile assemble the chicken wontons.
Chicken Wontons
Ingredients
- 20 wonton wrappers
- 1/2 lb. ground chicken breast
- 1 tsp. sesame oil
- 1 tsp. salt
- 1/2 tsp. ground black pepper
- 2 tsp. soy sauce
- 1 green onion
- 1 tsp. fresh ginger, peeled and minced
- 3 garlic cloves, peeled and minced
Directions
In a medium sauté pan heat to medium heat and start browning the chicken, breaking it all up. Mix in all remaining ingredients until it’s all combined and cooked through.
Lay out the wonton wrappers, working one by one, brush a little water on the edge and fill with 1 tsp. of the chicken filling. Fold wonton in half to create a triangle, and then fold the edges into create the wonton shape. Continue with the rest of the wontons. Make sure to seal all the edges good so they don’t break open.
Bring a separate pot of salted water to a low boil. Cook the wontons in the water for about 15-20 seconds just until they float and the remove with slotted spoon and place into the chicken broth.
Serve in a large bowl, place the trimmed hen of the woods mushrooms into the bottom of the bowl along with the spinach. Add the hot broth and wontons into the bowl and garnish with the enoki mushrooms, sliced fresno peppers, cilantro and lime. Serve immediately!!
