Salted Caramel Brownies
Rich dark fudge brownies with sweet salted gooey caramel swirled throughout. It’s mixed into the brownie batter and spread ontop letting it ooze into all of the brownie. This is not for the faint of heart and is truly so decadent. Each bite just melts into your mouth.
Salted Caramel
- 2 cups granulated sugar
- 3/4 cup butter, room temperature
- 2/3 cup heavy cream
- 1 tsp vanilla extract
- 1 tsp. salt
Brownies
- 2 large eggs + 1 egg yolk
- 1/2 cup light brown sugar
- 1/2 cup granulated sugar
- 1/2 cup melted butter, unsalted
- 2 tsp. instant coffee granules
- 2 1/2 tsp vanilla extract
- 1/2 cup dutch process cocoa powder
- 2/3 cup all purpose flour
- 1/2 tsp salt
- 3/4 cup chopped dark chocolate or chips
- Flaky sea salt
Directions
Starting with the caramel, get all of the ingredients together. In a heavy bottom sauce pan add in the granulated sugar over medium low heat. Melt down the sugar and gradually swirl it every 20 seconds and let it completely melt until the sugar is a deep golden. It will clump up at first but be patient and don’t walk away.
Once the sugar is completely melted, remove from the heat and add in the butter, swirl it around until it’s melted in. It will bubble up. Then pour in the heavy cream, vanilla extract and salt. Stir until everything is evenly combined. Remove from heat and let cool slightly. Pour into a jar, and place in the fridge until ready to use.
For the brownies, preheat the oven to 350 degrees.
Line an 8×8 baking pan with parchment paper.
Spread about 1/2 cup of caramel over the bottom of the parchment and place it in the freezer.
In a large bowl combine together the eggs, brown sugar, granulated sugar, melted butter, coffee granules and vanilla. Whisk until combined.
Add in the flour, cocoa powder and salt. Mix it all with a rubber spatula until combined. Then stir in the chopped dark chocolate or chips. Spread it out evenly onto the frozen caramel. Spoon more caramel over the top and using a knife swirl it in. Bake for about 33-37 minutes. Until they are just barely set in the middle. The caramel will have baked into the brownie. But drizzle remaining caramel over the baked brownie and place in the fridge to chill for about an hour. Sprinkle on the flaky sea salt. Cut into bars and enjoy!
