Rhubarb Mint Margarita
I’m going to start adding cocktails to the blog! So here we go, my husband is the mix master over here. I do the food and he does the cocktails. This little beauty though is fresh rhubarb and mint simple syrup with fresh squeezed lime and tequila! It’s the first day of summer so let’s celebrate!!
Rhubarb and Mint Syrup
- 2 cups rhubarb, chopped about 5 smaller stalks, leaves removed
- 1/4 cup mint leaves
- 1 cup granulated sugar
- 1 cup water
In a small sauce pan over medium heat, add everything together and let it simmer until the sugar dissolves. Turn the heat off and let it sit and steep for about 5-10 minutes until it’s cooled. Strain through a fine mesh strainer and place in the fridge until chilled. I mean, look at that color!!
Rhubarb Mint Margarita
Ingredients
- 2 oz fresh squeezed lime juice
- 2 oz agave tequila
- 1 1/2 oz rhubarb syrup
- garnish with a lime, sliced rhubarb and a sprig of mint, and a salted rim
Directions
When you’re ready to assemble, get your rhubarb syrup, tequila and juice a couple limes. Depending on how much juice is in them it’s about 2 limes per drink.
Pour everything into a shaker and fill with ice. Place a small amount of flaky sea salt or kosher salt on a small plate. Dampen the rim of the glass with lime juice and then dip into the salt. Shake up the margarita vigorously for 15 seconds. Using a cocktail strainer pour into the glass and finish off with ice. Garnish with the rhubarb, mint and lime. Cheers!
