Pomegranate Orange Salad
This is the perfect winter salad when the oranges and pomegranates are in season. The sweetness from the oranges and tartness from the pomegranates are the perfect combination! It’s light and refreshing and balances out nice with all that delicious comfort food that’s going around.
Ingredients
- 1 large pomegranate
- 2 oranges, segmented
- 2 cups fresh spinach
- 1/2 cup red onion, small diced
- 1 tbsp. fresh mint
- 1 tbsp. fresh basil
- salt and black pepper
Directions
Start by seeding the pomegranate. There are many different ways, but a friend of mine showed me a trick for these; cut the ends off and place the pomegranate into a large bag. Hit the bag onto the counter until it breaks and the seeds fall out. Pour into a bucket of water and all the seeds will sink to the bottom and the skin will float. Drain out water and you’re left with all the seeds. Place seeds into a large bowl.
To segment the orange, cut the top and bottom off so it stands up. Using a sharp knife start cutting off the peel including the white pith. When the peel is removed cut between the membranes to remove the segments. Place the segments into the bowl with the pomegranates. Add the spinach, red onion, herbs, salt and black pepper. Toss all together and serve immediately.
