Pan Seared Salmon along Toasted Lemony Orzo with Spinach and Feta
This is a really easy one pan meal, and it comes together super quick in about 20 minutes! I pan sear the salmon and then make the orzo in the same pan, with lots of lemon, a little cream, thyme, spinach and feta. It’s sooo good.
Ingredients
- 2 tbsp grape seed oil (or neutral oil)
- 2-4 boneless skinless salmon filets
- 4 garlic cloves, peeled and minced
- 2 tbsp. unsalted butter
- 1 1/2 cups orzo
- 4 1/2 cups chicken stock
- 1/2 cup heavy cream
- 2 big handfuls of baby spinach
- 1/2 cup crumbled feta
- 1 lemon, juice and zest
- 3-4 fresh thyme sprigs
- salt and black pepper
Directions
Start by seasoning each side of your salmon filet with a little salt and pepper. Heat the skillet with a little oil over medium high heat. Sear the salmon on each side for about 3-4 minutes just to get a nice crust. Add in a couple thyme sprigs. Make sure to only flip it once. You don’t have to cook it all the way through now it will continue cooking later. Once there is a nice crust on either side remove from pan and set aside.
Melt the butter and add the garlic cook for just a minute. Then add in the orzo. Toast the orzo for a couple minutes constantly stirring. Don’t walk away it will burn. Once it gets nice and golden add in about 1/2 cup of the stock at a time. Let is absorb into the orzo and then add more. Stirring constantly. Let cook for about 7 or so minutes then add in the spinach, thyme, heavy cream and feta into the orzo. Once that all starts to come together and the spinach starts to wilt, add the salmon back in and let it all cook together just for a couple more minutes until the salmon gets cooked through. Season with salt and black pepper. Garnish with more feta and lemon slices and serve!! ENJOY!
