Marry Me Chicken with Pasta
Marry me chicken! This dish is so dreamy it’s said that one may propose after having it. While the deal is already sealed over here, it was still quite the crowd favorite. The chicken is juicy and tender, garlic, sun-dried tomato cream sauce with spinach, sauteed mushrooms and served over pasta. It comes together in less than 30 minutes and I know you’re family will love it regardless the name.
Ingredients
- 2 tbsp. olive oil
- 3 chicken breast, boneless and skinless (sliced lengthwise into thin cutlets)
- 1 shallot, peeled and minced
- 3-4 garlic cloves, peeled and minced
- 1 cup mushrooms, sliced
- 2 tbsp. butter
- 1/4 cup sun-dried tomatoes, chopped
- 2 tbsp. tomato paste
- 1 cup dry white wine
- 1 cup heavy cream
- 2 cups baby spinach
- 1/2 cup freshly grated parmesan
- 1 lb. short pasta
- salt and pepper to taste
- finish with basil leaves and more parmesan
Directions
Bring a large pot of salted water to a boil.
Season the chicken with salt and pepper. Heat a skillet over medium heat with olive oil. Sear the chicken for about 3-4 minutes on each side. Until golden on each side. Remove from the pan and set aside. It’s ok if it’s not 100% cooked through, it should be about 3/4 of the way done.
Add the shallots, garlic and mushrooms into the pan. Season again with salt and pepper. Add in the sun-dried tomatoes and tomato paste. Stir until it comes together and then add in the white wine and heavy cream. Add in the spinach and cook until it’s all wilted into the sauce. Add the chicken back into the pan to finish cooking. Reduce the heat to medium low and let it simmer for a few minutes while you cook the pasta.
Cook the pasta, for about 10 minutes until al dente. Reserve about 1/2 cup of pasta water. Then strain the pasta.
Remove the chicken from the pan and slice it. Pour the pasta into the sauce and mix together, adding in the reserved pasta water if necessary. Or spoon the sauce over the top. Serve pasta and sliced chicken onto plates and finish with more parmesan and basil leaves if you wish. Enjoy!
