Lucky Charms Loft House Cookies

These cookies will bring you right back to your childhood! The kids will just love them. They are exactly like the melt in your mouth sugar cookies from the grocery store but better, without all the preservatives. Sprinkled with crushed up Lucky Charms marshmallows they are magic!

Ingredients

  • 1/3 cup unsalted butter, room temperature
  • 3 tbsp. neutral oil
  • 3/4 cup granulated sugar
  • 3/4 cup powdered sugar
  • 1 egg
  • 2 tsp. vanilla extract
  • 1/4 tsp. almond extract
  • 1 tbsp. milk
  • 2 cups cake flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp salt

Buttercream frosting

  • 1/2 cup unsalted butter, room temperature
  • 3 cups powdered sugar
  • 3-4 tbsp. milk
  • 1 tsp. vanilla extract
  • 1/4 tsp salt
  • food coloring
  • 1/2 cup Lucky Charms marshmallows, crushed up

Directions

Preheat the oven to 325 degrees. Line a baking pan with parchment paper and set aside.

In a large mixing bowl, add the room temperature butter, and oil and mix until it just comes together. About 2 minutes. Then pour in the sugar, powdered sugar, egg, vanilla extract, almond extracts and milk. Continue to mix until combined.

Scrape down the sides with a rubber spatula and add in the cake flour, baking powder, baking soda and salt. Beat just until the dry ingredients are combined. Don’t over mix.

Use a 1 ounce ice cream scoop to scoop out the dough. Use your hands to roll them together and place them on the prepared baking pan about 2 inches apart. Bake for about 13-15 minutes. Just until the edges are set but the middle is slightly underdone. Place on a cooling rack.

While the cookies are cooling, make the buttercream frosting. In a large stand mixer, add all the frosting ingredients and using a paddle attachment starting out slow and building speed, start mixing it all together. Continue to mix until the frosting is light, fluffy and smooth. Add in your favorite drops of food coloring and continue to mix until desired color.

Using a mini offset spatula or butter knife spread about 1-2 tbsp of frosting onto each cookies. Then crush up the Lucky charms marshmallows and sprinkle on top. Add a little edible gold dust to really make them sparkle. Keep in an air tight container for up to 5 days. Enjoy!
