Loaded Corn Dogs
In honor of baseball opening week, who doesn’t love corn dogs?! Besides pretzels they are the second thing I look for at the ball park. I was making all different kinds of dogs at work today, homemade corn dogs, brats, hot dogs, even tofu dogs, and I had made all the fun toppings to go on top of them…Slaw, kraut, onions, chili, cheese and cheese sauce… and this came about. Why not cut open the corn dog and load it up?? So the loaded corn dog was born. Have fun with the toppings!
Corn Dogs
Ingredients
- 8 hot dogs
- 1 cup all-purpose flour
- 1 cup corn meal
- 2 tbsp. sugar
- 1/2 tsp. salt
- 1 1/2 tsp. baking powder
- 1 tbsp. onion powder
- 1 tsp. garlic powder
- 1/2 tbsp. mustard powder
- 1/2 tsp. baking soda
- pinch of cayenne
- 1 cup buttermilk
- 2 eggs
- 1/4 cup flour for dusting
Directions
In a medium bowl, mix together all the dry ingredients; flour, corn meal, sugar, salt, baking powder, onion powder, garlic powder, mustard powder, baking soda, cayenne. In a separate bowl whisk together eggs and buttermilk. Add to the dry and whisk until all ingredients are combined and smooth.
Stick an 8 inch skewer into each hotdog end, leaving about an inch from the top. Dry each one with paper towel and roll in the dusting flour. Get rid of all excess flour. Set aside
Pour the batter into a tall glass.
Preheat the frying oil to 350 degrees. Dip each dog into the batter making sure to cover the whole thing, and let excess batter drip off. Place each one at a time into the frying oil using a twisting motion into the fryer so the batter doesn’t come off the dog. Keep twisting the dog until all sides are perfectly golden brown. Place on a plate lined with paper towel and cover to keep warm while continuing to fry the rest.
When you are all done, cut each on in half lengthwise and load it up with your favorite toppings, chili, cheese sauce, kraut, slaw, ketchup, mustard…..You could even go crazy and put some kimchi on there..How fun would that be?! Enjoy!
