Lemon Gelato with Fresh Lemon Juice, Honey and Sea Salt
Fresh made ice cream or gelato just hit differently! This lemon gelato is so satisfying, bright and clean. Its made with fresh milk, heavy cream, granulated sugar and lemon…lots of lemons! Juice and zest. But then to finish it off, squeeze a little more fresh lemon juice over the top with a drizzle of honey and a pinch of sea salt it’s like you feel that warm Amalfi coast breeze all around you. It might seem different but trust me it’s so good.
Ingredients
- 3 cups whole milk
- 1 cup heavy cream
- 1 cup granulated sugar
- 1 cup lemon juice, plus more to squeeze on top (about 5-6 lemons)
- 2 tbsp lemon zest
- 1 tsp. vanilla extract
- 1 tbsp corn starch
- 1 tbsp vodka
- Garnish with lemon juice, honey, flaky sea salt, and mint
Directions
In a medium sauce pan whisk together the milk, heavy cream and sugar. Place over medium heat and whisk just until the sugar has dissolved. Add in the lemon zest, cover with plastic wrap and place in the fridge to chill completely, about 1-2 hours. Then add in the lemon juice and vanilla. Strain with a fine mesh strainer into a large bowl. Whisk in the vodka and corn starch and combine.
Pour into an ice cream machine and follow manual instructions until frozen. Spoon into air tight container and freeze until ready to serve.
When it’s ready, scoop into bowls and top with a fresh squeeze of lemon juice, a drizzle of honey and a little pinch of sea salt, garnish with a mint leaf and enjoy!!
