Individual Banana Pudding

This southern classic is such a favorite and even more fun in individual jars. Blue it’s just so easy!! Beautiful layers of homemade vanilla pudding, fresh whipped cream, sliced bananas and crunchy sweet Nilla wafers are the perfect little dessert.

Vanilla Pudding

  • 3 cups whole milk
  • 3 tbsp. corn starch
  • pinch of salt
  • 3/4 cup sugar
  • 3 egg yolks
  • 1 tbsp. butter
  • 1 tsp. vanilla extract

Whipped Cream

  • 2 cups heavy cream
  • 2 tsp. vanilla
  • 1/2 cup granulated sugar
  • 3-4 sliced bananas
  • mini Nilla wafers

Directions

Starting with the vanilla pudding, in a small bowl whisk together 1/4 cup whole milk and 3 tbsp. corn starch, set aside.

Then in a medium sauce pan over medium heat, add the rest of the milk, salt, sugar. Heat just until the sugar is dissolved.

In a separate large bowl whisk together the 3 egg yolks. Gradually stream in about 1/2 cup of the warm milk. This is called tempering. Just to bring the eggs up to temperature. Continue whisking constantly until smooth. Then add the mixture back into the sauce pan along with the milk/cornstarch. Put back on medium heat, and continue to whisk until the mixture is thickened about 8-10 minutes. Once it’s thickened remove from heat and add in the vanilla and butter. Whisk together until smooth, and place plastic wrap directly over the pudding and chill in the fridge until completely cool.

Whipped Cream-In a large bowl with electric mixer, whip together the heavy cream and gradually add in the sugar and vanilla until stiff peaks.

Then to assemble, grab 4-5 small/medium mason jars and start with a layer of sliced bananas, then spoon or pipe in the pudding, layer on the Nilla wafers and then the whipped cream. Continue layering to fill jar. Finish with crushed Nilla wafers and whipped cream, and enjoy!!
