Ice Cream Sandwiches

They are a classic for a reason! Why change a good thing? With the holiday weekend coming up why not celebrate with a little ice cream treat!? Pressing the ice cream down with parchment and using a cookie cutter really helps ensures the round shape. Give it a try!!

Chocolate Chip Cookies

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 tsp. vanilla extract
  • 2 eggs
  • 3 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp salt
  • 2 cups dark chocolate chocolate chips
  • 3 quarts favorite ice cream

Directions

Starting with the ice cream, line a rimmed baking pan with parchment paper. Spread the ice cream over the parchment paper, using your hands or rubber spatula. Then cover with parchment and press it to an even layer. Keep covered and place back into the freezer.

For the cookies, preheat the oven to 350 degrees.

In a stand mixer with a paddle attachment, cream together the butter, sugar and brown sugar until smooth. Add in the vanilla and eggs and continue for another minute. Scraping down the sides.

Then add in the flour, baking powder, baking soda, and salt continue to mix together just until dough is combined. Stir in the chocolate chips.

Grease a cookie sheet and scoop cookie dough about 2 inches apart onto the pan. Bake for about 12-14 minutes until the edges get crisp and the centers just barely set. Let cool for a couple minutes, to ensure round cookies place a 3 1/2 in cookie cutter over a cookie and spin it a couple times. Sprinkle tops with flaky sea salt. Then place onto a plate to place in the freezer to chill down for at least 20 minutes.

When you’re ready to assemble, remove the ice cream from freezer and peel back the parchment. Use the same cookie round to cut out the ice cream. Sandwich each ice cream round between two cookies. Press down lightly and continue with the remaining. Store in an air tight container, and keep in the freezer. This will make about 10 sandwiches.
