Horchata

This popular Mexican beverage is made with soaked rice, sometimes milk, vanilla, and spices. Blended together and strained into this beautiful creamy sweet drink that’s great by itself over ice. Keep it in the fridge for up to 4-5 days and make sure to stir it up every time you drink it.

Ingredients

  • 1 cup uncooked long grain white rice
  • 2-3 cinnamon sticks
  • 2 whole nutmeg
  • 2 tsp. vanilla extract
  • 1 can evaporated milk
  • 1 can condensed milk
  • 6 cups fresh water

Directions

Place the rice into a colander and rinse off the rice. Then place into a large bowl and cover with water and spices and let soak for at least 5 hours or overnight.

Drain off the water.

Then place the rice, and any small pieces of cinnamon, remove the nutmeg and any large pieces of cinnamon, along with the fresh water into a blender and blend until smooth about 3-4 minutes. You may have to do it in 2 batches.

Repeat with the remaining rice, water and cinnamon and blend.

Strain through a fine mesh strainer into a large pitcher. Add in the vanilla extract, condensed milk, evaporated milk. Whisk it all together until smooth. Adjust spices if needed.

Chill and serve over ice!
