Healthy Banana Chocolate Chip Bread
I’ve been testing this recipe for quite awhile now. Subbing out oatmeal for the chocolate chips or swirling in some creamy peanut butter and all options are fantastic! This bread is really healthy, no granulated sugar or butter. So I feel really good about eating it and giving it to my baby! He loves it! Having Louie around, I always have bananas and sometimes they start to get over ripe so this is the perfect recipe to use up all those bananas. You can also freeze the bananas as well until you’re ready to make this recipe. This is my ultimate go to banana bread recipe that I probably make weekly! It’s so moist and delicious with decent size pieces of bananas and melty chocolate chips, it’s the best!
Ingredients
- 1/3 cup coconut oil, melted
- 1/2 cup maple syrup or honey
- 2 eggs
- 1 cup mashed over ripe bananas (2 1/2 medium or 2 large)
- 1/4 cup milk (skim, almond, or coconut)
- 1 tsp. vanilla extract
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1 3/4 cup all-purpose flour
- 1 cup dark chocolate chips
- 1 1/2 cups old-fashioned oats (optional)
Directions
Preheat the oven to 325 degrees F.
In a large bowl combine the wet ingredients, melted coconut oil, maple syrup, eggs, vanilla extract, milk and smashed bananas. Mix all together until combined.
Then add in the baking soda, salt, cinnamon and flour. Mix all together using a rubber spatula or wooden spoon until all combined there will be some small banana lumps. Then mix in the chocolate chips.
Pour into a greased loaf pan and bake for 50-55 minutes or until a toothpick inserted comes out clean. Enjoy warm with a little pad of butter!! Breakfast, lunch or snack, it’s perfect!
