Grinch Muffins
Muffins are made almost weekly in this house. The boys eat them for breakfast and quick snacks all the time. Anytime I can sneak in some healthy fruits or vegetables in them is a success! These have pureed spinach, a little apple sauce and banana in them, warmed up with a touch of cinnamon. We are obsessed!
Ingredients
- 2 cups all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1 tsp. ground cinnamon
- 1 bag (6 oz) baby spinach
- 3/4 cup pure maple syrup
- 1/2 cup unsweetened almond milk
- 1 egg
- 1/4 cup apple sauce
- 2 tsp. vanilla extract
- 2 large bananas
Directions
Preheat the oven to 350 degrees.
Line a muffin tin with paper liners and set aside.
In a large bowl sift together, the flour, baking powder, baking soda, salt and cinnamon, mix until combine and set aside.
In a blender or food processor combine the spinach, maple syrup, almond milk, egg, apple sauce and vanilla. Blend until smooth. In another large bowl mash the bananas with a fork and then pour the wet in and continue to mix it all together. Pour the dry ingredients into the wet ingredients and use a rubber spatula to mix everything together until fully combined.
Fill each of the muffin cups about 3/4 of the way up and bake for about 15-20 minutes, or until a toothpick inserted comes out clean. Let cool and enjoy!
