Grilled Sirloin with Roasted Poblano Pepper Sauce
After having Louie a little over a month ago, it’s definitely hard to get back into the kitchen and think about anything other than baby. I can’t wait until he can help me in the kitchen. He is just the light of our lives. But we did get to the market with him over the weekend and it is just bursting with all the summer produce! I found all these awesome poblano peppers. So I decided to make a sauce with a couple of them, it’s spicy, smokey and creamy a perfect compliment to the grilled beef!
Roasted Poblano Pepper Sauce
Ingredients
- 2 large poblano peppers
- 1/4 cup yellow onion, peeled and small dice
- 2 garlic cloves, peeled and minced
- 3 tbsp. unsalted butter
- 3 tbsp. flour
- 1 cup chicken stock
- 1 cup heavy cream
- 1/2 cup cilantro
- 1 lime juiced
- 2 tsp. cumin
- 2 cups spinach
- 1 beef sirloin
Directions
On a grill or open flame roast the peppers whole. Once the skin is all blistered on all sides remove from flame and place into a large bowl and cover with plastic wrap and set aside.
In a small sauce pan melt the butter, add the onions and garlic and cook until translucent. Then over low heat whisk in the flour and cook for a minute until the raw flour gets cooked out. Add the chicken stock and heavy cream, whisk until smooth making a roux.
Once the peppers are slightly cooled peel the skin off the peppers and remove the seeds, chop them up and add to the blender along with cilantro, spinach, cumin, lime juice, roux. Blend until completely smooth, season with salt and pepper. Set aside.
Heat grill or grill pan until just smoking. Season each side of the beef with salt and pepper. Grill on each side for about 3 minutes just until nice grill marks are created. Finish in 350 degree oven until desired temperature is reached. Pour the beautiful green sauce over the top and enjoy with your favorite sides!
I can’t get enough of this sauce it would be perfect over eggs or in fajitas as well!!
