Grilled Romaine with Citrus Chicken
Pair this easy little salad up with the Mexican Corn and you have an amazing summer dish. Light, sweet and smokey! It’s perfect.
Ingredients
- 3-4 heads Romaine Lettuce
- 2 skinless chicken breasts, boneless
- 2 tsp. lemon zest and juice
- 2 tsp. lime zest and juice
- 1 tbsp. extra virgin olive oil
- salt and pepper
Directions
On a hot grill pan drizzle a little olive oil. Zest both citrus’ and sprinkle over the chicken breast along with salt and pepper. Make sure to season both sides. Grill the chicken for about 8-10 minutes or until thermometer reaches 165 degrees F. Set aside and cover with tin foil. Then take the whole romaine head and place it on the hot grill pan. Grill about one minute on each side. So the leaves start to char and warm through. Sprinkle with salt and pepper. Make sure after grilled to cut the ends off. Place on the serving plate and slice the chicken to go alongside. Squeeze a little citrus juice over the top and garnish with a wedge of the lemon and lime. Enjoy!
