Grilled Pizza

Two words…. grilled pizza…it’s truly a beautiful thing. The simpler the better. When you start with really good simple ingredients it’s pretty easy to have a delicious pie! The key is to have a pizza stone. I know it’s not a new thing but I’ve been trying to figure out how to make some kind of ‘wood fire’ pizza at home without a pizza oven. Placing the pizza stone right on the grill and cranking it up to 500 degrees gets that perfect char on the crust with all the bubbles. Going light on all the toppings helps as well. I’m so excited about this and will be making pizzas all summer now!!

Pizza Dough

  • 2 tsp. active dry yeast
  • 1 tbsp. honey
  • 1 cup + 5 tbsp. warm milk
  • 1 1/2 cup all-purpose flour
  • 1 1/2 cup “00” flour
  • 2 tbsp. olive oil
  • 1 tsp. salt
  • cornmeal for dusting
  • 1/4 cup olive oil
  • 4-5 garlic cloves
  • salt and black pepper
  • pinch red pepper flakes

Directions

In a large bowl combine the yeast, honey and warm milk. Stir well and let sit until the yeast gets bubbly and foamy about 5 minutes.

Add in the flours, olive oil and salt and then use a wooden spoon or electric mixer with a dough hook and mix until the dough all comes together. Dump out onto a floured surface and knead for about 5 minutes until it’s a smooth ball. Grease the inside of the bowl and place back in covered with a towel and let it rise until doubled in size, about 1-2 hours.

Once risen punch the dough down, and cut into 4 equal pieces. Working with one at a time, roll into dough balls and use your hands or rolling pin and stretch dough into circles about 1/4 inch thick. Dust some cornmeal on a flat cookie sheet pan so it doesn’t stick and continue with the rest of the dough. Once they are all rolled out, mix in a small bowl the olive oil, garlic, salt pepper and red pepper flakes. Brush a little bit on each crust and then top with your favorite toppings.

Preheat your grill with the pizza stone inside to 500 degrees. Place your pizza onto the pizza stone and cook each one for about 5 minutes or until bubbly and slightly charred. Cut and serve. Enjoy the pizza party!!
