Grilled Corn Salad
Summer is finally here!! That means all the grilling and corn!!! I made this last night to go along with our brats. As the brats were finishing up I literally almost ate this whole bowl to my self. It’s that good. Everything you want on a hot night. It’s got the smokey grilled sweet corn with pops of cherry tomatoes, and crisp cucumbers and briney salty feta….YES! I have a ton of herbs growing in the garden too so I threw those in as well. It’s hot and cold and can be served best right away but will keep for a couple days in the fridge.
Ingredients
- 4 ears of corn
- 1/2 cup English cucumber, large dice
- 2 scallions
- 2 garlic cloves, minced
- 3 tbsp. herbs (I used parsley, basil and tarragon)
- 1/2 cup cherry tomatoes, sliced in half
- 1/2 cup feta
- 2 1/2 tbsp extra virgin olive oil
- salt and black pepper to taste
Directions
Fire up the grill!! Peel all the husk off the corn and throw it directly onto the grill. Let sit and rotate a couple times to get a nice char on all sides, about 5-7 minutes. Cut off the cob and add to a large bowl, ( I like keeping some of the kernals together when they get cut off, just so it looks like it came off the cob) along with the rest of the ingredients. Give it a nice toss and serve it immediately!!! How easy?!
