Grape and Rosemary Pizza
If you’ve never tried fruit on a pizza, this would be the perfect gateway. Grape and rosemary pizza! It’s fresh homemade crust, garlic herb oil, sliced red seedless grapes, freshly shredded mozzarella, topped with hot honey. Putting it in a really hot oven with a pizza stone or thin pizza pan is key for that crust. YES, PLEASE!
Pizza Crust
- 2 tsp. dry active yeast
- 1 tbsp. honey
- 1 cup + 5 tbsp warm water
- 1 1/2 cup all-purpose flour
- 1 1/2 cup “00” flour
- 2 tbsp. olive oil
- 1 tsp salt
Grape Rosemary Pizza
- 3 garlic cloves, peeled and minced
- 2 tsp. thyme, minced
- 1 tbsp rosemary, minced
- 2 tbsp. olive oil
- 1 cup red seedless grapes, cut in half
- 1 cup freshly shredded mozzarella
- drizzle of hot honey
- cornmeal for dusting
Directions
Preheat oven to 450 degrees.
Starting with the pizza dough, in a stand mixer with the dough hook, add the warm water, yeast and honey. Let it sit for 5 minutes until foamy. Then add in the flours, olive oil and salt. Mix until a smooth dough forms and it starts to pull away from the sides about 5-7 minutes. Cover and let rest in a warm spot for at least 1 hour or until doubled in size.
Punch the dough down and divide into 3-4 sections. Flour work surface and shape into balls. Working with one at a time, press dough into rounds to make the crust, you want it pretty thin. Dust the pizza pan with a little cornmeal and place dough on the pan.
In a small bowl combine together the garlic, olive oil and herbs. Spoon a little bit evenly over the crust. Top with the red grapes and mozzarella. Place in the oven to bake for at least 10-15 minutes or until golden and bubbling.
Once it’s baked, drizzle over the hot honey, and garnish with any rosemary or thyme, cut and serve!
