Glazed Lemon Lavender Cookies
We are in full spring mode over here, and all I’m thinking about is the garden, and these beautiful lemon lavender cookies! They are so light and citrusy and the perfect little treat! I love to massage the zest and lavender buds into the sugar just so they really release all their oils. Finished off with a little lemon glaze they just hit the spot!
Ingredients
Lemon Lavender Cookies
- 2 sticks unsalted butter
- 2 tbsp. lemon zest
- 2 tbsp. dried lavender buds
- 1 large egg, room temperature
- 1 tsp. vanilla extract
- 2 1/4 cup all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
Lemon Glaze
- 1 1/2 cup powdered sugar, sifted
- 2-4 tbsp. lemon juice
- additional zest and dried lavender buds for garnish
Directions
Preheat the oven to 350 degrees.
In a small bowl mix together the sugar, lemon zest and lavender buds. Massage together with your hands just until combined and they start to release their oils. Set aside.
In a stand mixer with paddle attachment add the butter and lemon lavender sugar and cream together until fluffy. Scraping down the sides. Then mix in the vanilla and egg just until combined.
Pour in the flour, baking powder, and salt and continue to mix for a couple minutes just until dough forms.
Using a 2-3 tbsp cookie scoop, scoop onto a baking pan lined with parchment paper about 2 inches apart. Bake for 12-14 minutes just until puffed up and golden on the edges.
For the glaze, in a medium bowl whisk together the powdered sugar and lemon juice just until smooth.
After the cookies have cooled slightly take each one and dip it into the glaze and let any excess drip off. Garnish with any lemon zest or dried lavender buds if you wish and let them sit for just a couple minutes to set. Enjoy!
Store in an air tight container for 3-4 days.
