Fully Loaded Asian Salmon Burgers
I can’t even describe how delicious these are! There are just so many flavors and textures in these salmon burgers, sweet, salty, crunchy, and creamy. You definitely need two hands to eat this!
Salmon Burger
Ingredients
- 1 lb. wild Atlantic salmon filet, skinless and boneless
- 2 tbsp. scallions
- ¼ cup red bell pepper, small diced
- 1 red chili pepper
- 2 tbsp. soy sauce
- 1 tbsp. fresh garlic, minced
- 1 tbsp. fresh ginger, peeled and minced
- ½ cup panko bread crumbs
- Season with salt and black pepper
- 4 burger buns
- 1 cucumber sliced and seeded
- ½ cup red pepper sliced
- A handful of arugula
Directions
Take the salmon and cut into large dice. Then in a large food processor with a metal blade attachment add the salmon, scallions, red pepper, chili pepper, soy sauce, garlic and ginger. Run the blade until just combined and pureed together. Place mixture into a large bowl and sprinkle in the bread crumbs if it looks like it won’t hold together. With clean hands start forming patties into the palm of your hand and set aside.
On either a charcoal grill or grill pan, heat up with a little olive oil to medium high heat. Grill burgers for about 7-8 minutes on each side so it gets great grill marks. Cook until the center reaches 165 degrees F. You can also use a sauté pan if you don’t have a grill pan. I just love the grill marks!
Carrot and Red Cabbage Slaw
Ingredients
- 1 carrot peeled and shredded
- 1 cup red cabbage, shredded
- 1 tbsp. black sesame seeds
- ¼ cup rice wine vinegar
- 2 tbsp. sugar
Directions
Combine ingredients into a small bowl, set aside.
Cilantro lime ginger Mayo
Ingredients
- 2 tbsp. fresh cilantro minced
- 2 tbsp. lime juice
- 1 tbsp. lime zest
- ½ tsp. garlic, minced
- 1 tbsp. fresh ginger, peeled and minced
- ½ cup mayo
Directions
Combine all ingredients into a small bowl and set aside
To finally assemble this burger, grill the buns if you wish. Place a little of the cilantro mayo on top, bottom or both. Then the cucumbers, red pepper, salmon burger, arugula and finally the carrot cabbage slaw! Come on look at those colors!!
Roasted herbed potatoes
Ingredients
- 2 Yukon Gold potatoes, wedged
- 1 purple sweet potato, wedged
- 1 tbsp. fresh rosemary, minced
- 1 tbsp. fresh parsley, minced
- Salt and pepper
- Extra virgin olive oil
Directions
Preheat oven to 400 degrees F. Spread potatoes into a thin layer on a baking sheet. Drizzle the olive oil over the top, and sprinkle with rosemary salt and pepper. Using clean hand mix all together so everything is covered. Spread back to single layer and bake for 20-30 minutes until tender and golden crispy.
