Crispy Halloumi with Peanut Noodles
Creamy peanut noodles tossed together with lots of crisp vegetables and seared crispy halloumi, it’s such a vibrant flavorful dish. The peanut sauce is made with garlic, ginger, creamy peanut butter and red curry paste.
Ingredients
Peanut Sauce
- 1/2 cup creamy peanut butter
- 4 garlic cloves, peeled
- 1/2 inch ginger, peeled
- 3 tbsp. honey
- 2 tsp. sesame oil
- 3 tbsp. gochujang
- 3 tbsp. red curry paste
- 1/3 cup soy sauce
- 4 packages (3.5 oz) ramen or long cut pasta
- 2 carrots, peeled and thinly sliced
- 2 cups baby spinach
- 1 red pepper, thinly sliced
- 8 oz block halloumi, sliced
- garnish with black sesame seeds, thinly sliced cucumber and cilantro
Directions
Starting with the peanut sauce, in a food processor with a metal blade attachment, add in the peanut butter, garlic, ginger, honey, sesame oil, gochjuang, red curry paste and soy sauce. Puree until smooth and set aside.
Bring a pot of water to a boil.
Then in a medium sautéed pan with a little oil, saute the carrots and red peppers just until tender and then add the spinach and cook for another couple minutes just until it has wilted down. Add into a large serving bowl. Cook the ramen for 3 minutes. Drain and add into the bowl. Pour in the peanut sauce and toss it together.
For the halloumi, pat it dry with a paper towel. Then in a medium saute pan over medium heat add a little bit of oil and sear the halloumi for just a couple minutes on each side until golden brown. Add to the noodles and toss it all together. Sprinkle over black sesame seeds, cilantro, and enjoy!
