Crispy Baked Fries with Whipped Feta
Garlic aioli is good and all but what about whipped feta with the fries? I seasoned these fries with lots of paprika, cumin, chili powder, garlic powder and lots of flaky sea salt. Baked at a high heat to get that nice crispy outside. Then dipped in the creamy whipped feta. It’s really great on just about anything.
Baked Fries
- 1 russet potato, peeled and cut into fries
- 1 sweet potato or yam, peeled and cut into fries
- 2 tsp. paprika
- 1 1/2 tsp cumin
- 1 tsp. garlic powder
- 1 tsp chili powder
- 3 tbsp olive oil
- kosher salt and black pepper
- flaky sea salt and parsley to finish
Whipped Feta
- 1/2 block feta
- 3/4 cup heavy cream
- 2 garlic cloves, peeled
- olive oil and paprika to garnish
Directions
Preheat the oven to 425 degrees.
In a small bowl mix together all the spices.
Cut all the fries about the same size and lay them out on the rimmed baking pan. Drizzle the olive oil over the top and then sprinkle on the spices. Use your hands to toss them all together, to get everything evenly coated. Make sure they are not overlapping and barely touching. Use two pan if you need to. Generously season with salt and black pepper and then bake in the oven for about 20 minutes. Gently flip over the fries and place back into the oven for another 5-10 minutes until they are crisp and golden.
While the fries are baking make the whipped feta. In the smaller bowl of the food processor with a metal blade attachment, add the feta, and garlic and pulse together. Then with the motor running slowly add in the heavy cream. Just to incorporate a little air and it becomes smooth. Use a rubber spatula to scrape down the sides. Make sure it’s all incorporated. Then spoon into a small bowl.
To finish the fries transfer to a serving plate and garnish with more flaky sea salt and parsley. Enjoy hot out of the oven!!
