Creamy Cajun Pasta With Chicken Sausage

We love a quick mid week pasta dinner! Creamy bowtie pasta with seared cajun chicken sausage, lots of vegetables, broccoli, peppers, mushrooms, herbs and a lighter cream sauce. A splash of white wine and those beautiful cajun spices we all love so much, make this dish so delicious.

Ingredients

  • 1 lb. bowtie pasta (or your favorite short pasta)
  • 2 tbsp. olive oil
  • 1 tbsp. butter
  • 1 lb. cajun chicken sausage, sliced (or andouille sausage)
  • 3-4 garlic cloves, peeled and minced
  • 1 cup broccoli florets
  • 1/2 cup red pepper, medium dice
  • 1/2 cup yellow pepper, medium dice
  • 1 cup mushrooms, sliced
  • 3 tbsp. cajun seasoning
  • 3/4 cup white wine
  • 1/2 cup chicken stock
  • 1/3 cup whole milk
  • 1/4 cup heavy cream
  • salt and black pepper
  • 2 tbsp. parsley, minced
  • handful freshly grated parmesan

Directions

Bring a large pot of salted water to boil.

While the water is coming to a boil, in a large skillet or sauce pan, heat the olive oil and butter over medium heat. Sear the chicken sausage in the pan for just a couple minutes until they turn golden on both sides. 2-3 minutes. Remove the sausage from the pan and place on a plate.

Into the same pan add in the vegetables. Season with salt and pepper, stirring it around until they just start to get tender. Then add the sausage back into the pan along with the garlic, cajun seasoning, white wine and chicken stock. Let that reduce for just a couple minutes and then add in the milk and cream. Simmer all together just until the pasta is done. Drain the pasta and pour into the sauce. Season again with salt and pepper, garnish with parsley and a nice handful of fresh parmesan. Mix it all together until combined and spoon into serving dishes. Enjoy!

Cajun Seasoning

  • 2 tsp. smoked paprika
  • 1 tsp. oregano
  • 1 tsp. thyme
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1/4 tsp. cayenne powder
  • 1/4 tsp. black pepper
  • 1/4 tsp. salt

Mix all the spices together in a small bowl
