Corn, Roasted Red Pepper & Cous Cous Burgers
You can be so creative with this burger!! And that’s why I can’t get enough of them. You can top it with anything you want. I just like the tomato, feta, arugula combo because it complements the burger. Have fun with this one!
For the Garlic Aioli:
Ingredients
- 1 tbsp. garlic, minced
- ¼ cup mayo
- Salt and pepper
Directions
Mix all ingredients together and set aside.
For the Burgers:
Ingredients
- 2 cups corn
- 1 cup roasted red peppers, diced
- 2 ½ cups cous cous, cooked according to package directions
- ¼ cup basil, chopped
- 1 ½ cup panko bread crumbs
- 2 eggs
- 1 tbsp. garlic, minced
- Salt and pepper to taste
- 2 cups Arugula
- 1 cup cherry tomatoes, sliced
- 1 cup Feta, crumbled
- 8 Ciabatta buns
Directions
In a sauté pan with a little olive oil, cook the corn until tender. In a medium sized bowl, combine the corn, red peppers, basil, cous cous, and mix together. Then, add the bread crumbs, eggs, salt and pepper. Using your hands, combine the mixture together until you can form small patties; about the size of the palm of your hand. Set aside until all are formed.
In a nonstick pan with a little oil, on medium heat start pan frying the patties until golden on each side. About 5-6 minutes on each side.
When all are golden brown, start assembling the burgers. Cut the ciabatta buns in half and put them on a hot grill pan for a minute to brown the edges. On the bottom, spread a little garlic aioli and place arugula. Top the burger with crumbled feta and sliced tomatoes!
