Coconut Curry Turkey Meatballs
This dish is so easy to make it’s one pan, 30 minutes and mostly pantry items. You can substitute ground chicken also if you have that instead, and also add in whatever vegetables you have just to give some color! Serve over a little basmati rice to soak up all the sauce, because this dish is really all about the sauce!!
Turkey Meatballs
Ingredients
- 1 lb. ground turkey
- 3 garlic cloves, peeled and minced
- 1/2 cup yellow onion, peeled and small dice
- 1/2 inch ginger, peeled and minced
- 1 1/2 tsp. ground cumin
- 1 tsp. ground corriander
- 1 tsp. ground cinnamon
- 1 1/2 tsp. smoked paprika
- 1/2 tsp. ground turmeric
- 2 tbsp. red curry paste
- 1 tbsp. tomato paste
- 1/4 cup fresh herbs, parsley, cilantro or basil
- 1 egg
- 1 cup bread crumbs
- salt and black pepper
Directions
Preheat oven to 350 degrees.
In a large bowl combine everything evenly together except the ground turkey. Once it’s combined together and created almost like a paste, add in the turkey. Mix together using your hands. It works best to get it all even. Then grab about 2-3 tbsp at a time and roll in your hand forming little meatballs. Place on baking sheet pan, and finish forming the rest of the meatballs.
Then place in the oven for about 20-25 minutes or so just until golden and cooked through. While they are baking make the sauce.
Coconut Curry Sauce
- 2 tbsp. neutral oil
- 1 tsp sesame oil
- 2-3 garlic cloves, peeled and minced
- 1/2 cup yellow onion, peeled and small dice
- 1 inch ginger, peeled and minced
- 2 tbsp. red curry paste
- 1 cup bell pepper, small dice, red or yellow
- 1 cup mushrooms
- 2-3 big handfuls of spinach
- 1 can full fat coconut milk
- 1/2 cup low sodium soy sauce
- a couple dashes of fish sauce
- 1 lime juiced and zested
- season with salt and pepper
- Serve with basmati rice
Directions
In a large skillet with the oil, heat over medium high heat. Add in the garlic, ginger, onion and saute until translucent. Then stir in the red curry paste and cook for a couple minutes. Add in the peppers and mushroom and cook until they are tender just a couple minutes. Pour in the coconut milk, soy sauce, fish sauce and lime and let that simmer on medium until it starts to thicken then add in the spinach and let that cook down. Season with salt and pepper. Once the meatballs are cooked add into the sauce to just coat and finish cooking. Serve over rice and enjoy!!!!
